Maple Walnut Cookies

Maple Walnut CookiesCool fall days always leave me longing for an afternoon cup of coffee.  And somehow that cup of coffee just does not seem right without a warm cookie at its side.  And if that cookie involves cinnamon and spice, maple or molasses, all the better.

So what are waiting for?  Let’s bake ourselves up a late afternoon treat, a batch of soft maple syrup and walnut cookies.  Let’s forget all that salad and veggie talk from last week and just accept that life happens and so do cookies. 

Soften a stick of butter and preheat your oven…it’s cookie time!

Butter and dark brown sugar go in one bowl, flour, cinnamon, powder, and salt in another.  Measure out some maple syrup, grab an egg and the vanilla, toast some walnuts, and you’re ready to roll.

Creaming Butter and Brown SugarThen we’ll add the maple syrup along with the egg and a spoonful of vanilla extract.  If you have maple extract, you could add a splash of that instead to really amp up the maple flavor.

Beating in an Egg and Maple SyrupBeat ’til incorporated, then mix in the flour.

Stirring in FlourStir in bits of toasted walnuts.  Better do a little quality control and sample the dough.  Nope, I will never going to out-grow loving cookie dough.  Will you?  Didn’t think so.

Stirring in WalnutsDrop balls of dough onto a baking sheet and press a walnut half into the top.  Bake until the edges are golden and the centers are still a little on the soft side.

Shaping the Cookies

Cool on a wire rack for as long as you can bear, put on a pot of coffee, grab the jug of milk, and embrace the fact that fall afternoons were meant for cookies.

Ingredients
  1. 12 Tbsp. (1 1/2 sticks) Unsalted Butter, softened
  2. 3/4 c. Dark Brown Sugar
  3. 1/2 c. Pure Dark Amber Maple Syrup
  4. 1 tsp. Vanilla Extract
  5. 1 Egg
  6. 2 1/2 c. All-Purpose Flour
  7. 1 tsp. Baking Powder
  8. 3/4 tsp. Kosher Salt (reduce to 1/2 tsp if using table salt)
  9. 1 tsp. Ground Cinnamon
  10. 1 c. chopped Walnuts, toasted and cooled
  11. heaping 1/2 c. Walnut Halves (or large pieces), toasted and cooled
Instructions
  1. Preheat oven to 350° and line 2 baking sheets with parchment paper.
  2. Cream butter and sugar using an electric mixer until fluffy, about 2 minutes. Beat in maple syrup, egg, and vanilla.
  3. Whisk together flour, baking powder, salt, and cinnamon in a medium bowl. On low speed, mix the flour mixture into the butter mixture until just incorporated. Stir in the chopped walnuts.
  4. Drop heaping tablespoons of dough onto the prepared baking sheets. Press a walnut half or a couple of large walnut pieces into the top. Bake until the cookies are slightly golden around the edges and seer but still soft in the center, 12-14 minutes, rotating the baking sheets halfway through. Cool for 5 minutes on the baking sheet then transfer to a wire rack to cool for at least another 5-10 minutes before serving.
