I have a complicated relationship with chocolate.  I spent the first 20 or so years of my life not liking it at all.  Marbled birthday cake?  I’ll just eat the white parts, thank you very much.  Oreo cookies?  Yup, I was the type to lick out the centers and try to pass off the slobbery wafers on unsuspecting siblings.  Chocolate ice cream?  Honestly, I’m still not into it.

But at some point, a little chocolate seed in my food brain started to sprout and now I find myself craving it from time to time.  You don’t see a lot of chocolaty recipes around here, because my cravings tend to require immediate action–no time for recipes or pictures.  When I need chocolate, there’s usually not time to wait around for butter to soften or ovens to preheat, it’s more of a how-can-I-get-half-a-bag-of-chocolate-chips-into-my-mouth-as-quickly-as-possible sort of situation.

Well, I found myself in a days-long chocolate mood last week.  My pantry was in rough shape–not a chocolate chip or baking bar in sight.  I cleaned out my freezer, hoping to find a forgotten brownie or slice of cake.  No luck.  I tried concocting a frothy/sludgy iced mocha with cocoa powder; didn’t work.  I needed intense chocolate, something I could hold onto, chewy, fudgy, and decadent.  I needed to do it right.  I needed a big batch of cookies.

These cookies are everything I could’ve asked for and most definitely worth a trip to the grocery store/waiting for the oven to preheat.  They are intensely chocolaty, fudgy in the center, chewy around the edges.  I snuck in a handful of rum-soaked cherries but I imagine chopped walnuts or candied ginger being equally delicious.

Peanut Butter-Chocolate Chip Oatmeal-Raisin Cookies

Peanut Butter-Chocolate Chip Oatmeal-Raisin CookiesJust writing the title of this post, I feel like a maniac.  How on earth do you even punctuate such a cookie concoction?

See, I was having the kind of day where I just needed a cookie–a good old classic, dunk-it-in-a-glass-of-milk kind of cookie.  It also happened to be the kind of day that I couldn’t make a decision to save my life.  Can I get away with wearing the brown boots with a black sweater, should I vacuum the house or do my taxes, do I feel like oatmeal-raisin cookies or chocolate chip or peanut butter…

…you can probably see where this is going.  My indecision led to continuing not to care if black matches brown, not vacuuming or working on my taxes (by far the easiest choice of the day), and jamming everything that’s good in the world in 1 crazy cookie.  It turns out, indecision can occasionally be a good thing and sometimes not showing an ounce of restraint actually works out.  These cookies are majorly satisfying and just the thing to bake when you’re having a just-need-a-cookie sort of day.

White Chocolate, Espresso & Hazelnut Pinwheel Cookies

White Chocolate, Espresso, and Hazelnut Pinwheel CookiesOne thing I really appreciated about traveling in Belgium and the Netherlands this fall was that every time I ordered a coffee or tea, it would be served with a little something sweet.  In most cases, it’s just a packaged cookie or a thin wafer of chocolate, but once in a while, you really luck out and get a tiny cream puff or a narrow sliver of a tart.  

My best bonus treat came after dinner one night.  We had finished our meal and I was in dire need of a coffee.  Matt and I each ordered one and a couple of minutes later, our server set a tiny silver tray on our table.  On it, sat 2 espressos with some of the densest crema I’ve ever seen and a thick chunk of white chocolate with a small knife.  Now, mind you, we were stuffed and white chocolate is something we both claim to dislike, but not wanting to be rude, I picked up the knife and broke off a shard for each of us.

Within seconds, I retracted my statement about not liking white chocolate.  Paired with the espresso, it was so unbelievably good!  I nibbled and sipped, nibbled and sipped, wondering why coffee isn’t always served with a slab of white chocolate.

So that’s the moment I was dreaming of I was when deciding what kind of cookie to bake.  I wanted to combine those flavors into a small, rich bite to be nibbled with coffee.  And, as always, I’ll take any excuse I can find to retreat into a happy vacation-memory fog for a moment.

Spiced-Chocolate Shortbread Cookies

Remember a couple of days ago, when I said I was going to lay off the baking and hefty eating until I fully recovered from Thanksgiving week eating?  Yeah, about that…

…it didn’t happen.  See, I found myself with an unexpected morning off this week.  And it just happened to be in the middle of a massive snow storm.  And I had to shovel.  That’s hard work, you know.  You’ve really got to keep your strength up if you’re going to be shoveling lots of heavy, wet snow.  So the butter came out to soften and my holiday baking was underway.

I started with these spiced chocolate shortbread fingers.  They are the perfect cookie to bake when you’re snowed in, relying on just a few staple ingredients you can almost always count on having on hand: butter, flour, cocoa, sugar ‘n spice.  The flavor of the shortbread actually intensifies after sitting for a few days, making them an excellent treat for gifting.  Plus, waiting for them to age to perfection buys me some more salad time.  It all makes perfect sense, right?  Right.

Almond Butter, Dark Chocolate & Coconut Cookies

Almond Joy CookiesThe way I see it, there are 2 ways to deal with rainy snowy days.  You can order a pizza, put on your jammies and watch an old movie or you can bake cookies.

Today I’m going the cookie route.

When it’s gloomy out and you might be feeling a little gloomy yourself, you don’t want crazy, fancy cookies.  Save the macarons, cutesy cut-outs, and sandwich cookies for another occasion.  We’re looking for classic: crisp, crackly exterior with a chewy center.  Chocolate?  Good idea.  Peanut butter?  Maybe if I had some…let’s try almond butter instead.  Chocolate and almonds. Might as well toss in some coconut and go for an Almond Joy sort of thing.
