Sour Cherry Cornmeal Clafoutis

This simple dessert is a great way to showcase fresh cherries. The fruit is surrounded by a lightly sweet custard and the cornmeal forms a delicate crust. Serve warm with amaretto-spiked whipped cream or a scoop of vanilla ice cream.
Ingredients
  • ½ c. All-Purpose Flour
  • ¼ c. Cornmeal
  • ⅔ c. Sugar
  • ⅛ tsp. Salt
  • 3 Eggs
  • 1¼ c. Whole Milk
  • 1 Tbsp. Amaretto or 1 tsp. Almond Extract
  • 3 c. Sour Cherries, pitted
  • Butter and Cornmeal for the pan
  • Powdered Sugar and Whipped Cream or Ice Cream for serving
Instructions
  1. Preheat oven to 375°. Butter a pie pan and shake a Tbsp. or so of cornmeal around the pan to coat.
  2. In a medium bowl, whisk together the flour, cornmeal, sugar, and salt. In a second bowl, whisk the eggs until foamy. Beat in the milk and amaretto (or almond extract). Slowly whisk the egg mixture into the dry ingredients, stirring until the mixture is lump-free.
  3. Place the cherries in the prepared pan and pour the batter over it. Bake for 40-45 minutes until a tester inserted in the center comes out clean. Allow to cool slightly, then sprinkle with powdered sugar, cut into wedges, and serve with whipped cream or ice cream.
